Not to toot my own horn... but I make an amazing Thanksgiving turkey. It's true, ask anyone who lives in my home.
I think Scott about died the first time I made a turkey. And then he called me a name I never thought I would hear. He called me a serial killer. Yep. I would like to explain why and how he came to that conclusion.
The way my turkey is made isn't anything special like brining, or smoking. It's so basic, to me at least. And it might be creepy, I admit it. I separate the turkey skin from the meat and season in between them. With the secret ingredient.
And the secret ingredient is: BUTTER!
If you haven't heard of compound butter, here's what it is. It is softened butter mixed with seasoning then rolled up and refrigerated. My recipe is super easy.
COMPOUND BUTTER
1 cup unsalted butter, at room temperature (2 sticks)
5 cloves garlic, minced
1 bunch roasting mix found with the fresh herbs at the store
1 tsp poultry seasoning
Soften butter. Cut roasting mix herbs. Mix herbs, garlic and poultry seasoning in to butter. Place butter in middle of a piece of Saran Wrap, and form butter in to a roll.
