Sweetie la Pie: Irish Apple Amber

I am so excited to share this pie with you! When I saw it on Pinterest I knew it was perfect for March. We have Pi Day in two days and St. Patrick's Day next week.



It is a traditional Irish pie, I love that it isn't too sweet and is a little tart. It took me about 45 minutes to get it ready to go in the oven. The thing that took the longest were the apples. First you have to peel them. Then you have to grate them (yep like cheese). But after that it went fairly quick.


I also burned the meringue in the broiler. I blame that on the fact that I am not used to having such an efficient oven yet. It's been 3 months, I am still learning!



I got the recipe from the Stemilt website and they did a great job! I know it is one we will be making each year.


Having the apples grated meant that you didn't have a giant piece of apple to eat or cut through. And I never thought about putting meringue on an apple pie. If you want to try it out this week, do it!
