When I was a little girl I remember my mom making Snickerdoodles as many times as she made chocolate chip cookies. I should ask her to make some soon. Now, a cookie made in to a pie is pure gold.
This Snickerdoodle pie starts with a regular pie crust... My biggest secret to pie crust, but the ones in the refrigerated section. No need to do from scratch. then you melt butter and brush it across the pie crust. Sprinkle some cinnamon and sugar on top of the butter and you're ready for the filling. I haven't made Snickerdoodles since I lived at home with my parents. So I can't remember how similar this dough was compared to the cookies. I topped it with some more cinnamon and sugar and it went in the oven.
I loved that this had a sweet glaze to go on top.
The pie was more dense that I anticipated, so I didn't love that as much. Would I make this pie again? For sure. I think it is more of a autumn and winter pie though. Perfect for coming home to after a day at the pumpkin patch.
