Hawaiian Haystacks

We love Hawaiian Haystacks at our home. They are a comfort food for sure. We use them to feed a crowd for parties as well. Both Oliver and Claire’s first birthday parties had Hawaiian Haystacks as the main dish!

I love that they can be customized with the toppings for whatever the individual likes. I enjoy putting chow mien noodles, shredded cheese, pineapple, tomatoes, green onion, coconut flakes and salt & pepper.

My kids love to separate all the toppings in to piles on their plates and eat them all individually. It is so customizable and everyone loves it! Scott loves to pile his as high as possible and has finally come around to using chow mien noodles in his.

The best thing about this meal is you can make as much or as little as you need for your family or to serve a party!

Comfort food to feed a crowd or just one

Ingredients

  1. 1 rotisserie chicken (shredded) – 2 10.5oz cans of Cream of Chicken soup – 10.5oz chicken broth – cooked rice – chow mien noodles – shredded cheese – coconut flakes – celery – green onion – tomatoes – olives – pineapple – salt & pepper

Directions

  1. Shred the rotisserie chicken. 2. Mix the Cream of Chicken soup and chicken broth together in a saucepan. 3. Add shredded chicken to the sauce. 4. Make rice. While that is all cooking cut up toppings. 5. Add rice to your plate, top with sauce and then toppings. Enjoy!
