For my pie inspiration I have been perusing Pinterest. Because, where else do you go when you need inspiration????
I saw this Chocolate Chip Coconut Pie on there and knew it would be tasty. I decided it would make an amazing Christmas dessert. I made a Yule log last year and it was so good, but also a lot of work and with my big kids visiting their dad for the holiday I wanted something easy and fun.
One of the best things about this pie is it uses a pre-made graham cracker crust. I then thought, I bet it would taste amazing with a traditional pastry crust. And I wasn’t wrong.
That was the only thing I changed. We also served it with a little drizzle of caramel sauce and it was divine! If you are looking for an easy pie that looks like it takes forever to make and tastes amazing, this is it!
